Available as an Orange Waxed cheese available in 125g waxed wedges. Also available in 2.5 - 3 Kg round of 7- 8 inches across. Traditionally smoked in Yorkshire over oak chips. Ripened for about 4-6 weeks, it has a creamy smooth wensleydale/caerphilly texture. Although technically a hard cheese, because it has been pressed, it is generally described as semi- hard.
