Available as a Green Waxed cheese in a 125g waxed wedge. Also available in 2.5 - 3 Kg round of 7- 8 inches across. Ripened for about 4-6 weeks, it has a creamy smooth wensleydale/caerphilly texture. Although technically a hard cheese, because it has been pressed, it is generally described as semi- hard.
