Available as a natural rind cheese, in a 2.5 - 3 Kg round, or a Clear Waxed cheese in a 2.5 - 3 Kg round, 7- 8 inches across.
The Waxed cheese is also available in 125g waxed wedges.
Ripened for about 4-6 weeks, it has a creamy smooth wensleydale/caerphilly texture.
Although technically a hard cheese, because it has been pressed, it is generally described as semi- hard.
